Apple Chiffon Cake

I was going to make blueberry cobbler today, but discovered I only had 4 cups of blueberries, not 6. I did however, have 2 delicious looking apples and made this:

It looked better before we ate half of it.

Apple Chiffon Cake

1/3 cup light vegetable oil

3/4 cup sugar

2 eggs

3/4 cup all purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon ground nutmeg

1/4 teaspoon ginger ( I was out so I substitued pumkin pie spice)

1 cup finely chopped apples

2 tablespoons sugar ( i used brown sugar)

2 tablespoons finely chopped walnuts

1/2 teaspoon ground cinnamon

Heat oven to 350F

For cake - combine oil and sugar in large bowl. beat at medium speed until mixed. Add eggs; beat well.

Combine flour, baking powder, salt, baking soda, nutmeg and ginger in small bowl. Add to oil mixture. Beat just until blended. Stir in apples. Spread in ungreased 9 inch square pan.

For Topping - combine sugar, nuts, and cinnamon in small bowl. Sprinkle over batter. Bake at 350F for 25 to 30 min until wooden pick inserted in center comes out clean. Serve warm or at room temp.

This sounds really nice, I will have to keep this in my favourites so I can make it sometime soon!

Woohoo... you're actually sharing recipes. And it does look delicious and I think I have all ingredients, so I could make it. If only we had one of those gorgeous mixing appliances... (hubs' birthday is in February).

Any cake with fruit in it must be very healthy and non-fattening too

This looks delicious! Reminds me a bit of the apple cake my old Swedish ceramics professor would make for us. I always wanted the recipe...will have to try this one and see how similar it is :)
